Sorrel

Common Sorrel or Garden Sorrel (Rumex acetosa), is a fresh cut herb, slightly sour, used in soups or salads and contributes to the counterbalancing of fatty meats, goose, duck and fish, adding freshness to ordinary salads and enhances omelettes and lentil dishes.
A tip from old days:
In traditional medicine, sorrel is used to reduce the need for salt in various dishes.
